Richard Simmons recipe, modified
| 1/2 | cup egg beaters |
| 2 | eggs |
| 1/2 | cup 2% milk |
| 1/2 | cup mushrooms |
| 1/4 | cup onion |
| 8 | oz fat free cottage cheese |
| 1 | cup broccoli |
| 1/4 | cup green pepper |
| 1/2 | cup salsa |
- Preheat oven to 350 degrees
- mix all ingredients in bowl
- pour into small 7" x 11" glass baking dish
- bake for 50 minutes
