Breakfast Casserole Recipe

Richard Simmons recipe, modified

Ingredients
1/2 cup egg beaters
2 eggs
1/2 cup 2% milk
1/2 cup mushrooms
1/4 cup onion
8 oz fat free cottage cheese
1 cup broccoli
1/4 cup green pepper
1/2 cup salsa
Directions
  1. Preheat oven to 350 degrees

  2. mix all ingredients in bowl

  3. pour into small 7" x 11" glass baking dish

  4. bake for 50 minutes
