Snappy Gazpacho

Makes 6 servings

"Nutrient Dense" fresh cold tomato-based soup for summer dinners. Easy, fast and good. For less "snap" decrease or omit Tabasco. For more add fresh ground multi-colored pepper corns, fresh jalapeno, or red pepper flakes

Ingredients
1 cucumber, small, peeled & chopped
1 bell pepper, red, cored, seeded & chopped
1 zucchini, small, peeled and chopped
1 onion, medium, chopped
6 grams garlic (11215), minced
3 cups tomato juice
4 tablespoons cilantro, fresh chopped
2 tomatoes, medium, peeled and quartered
1/2 teaspoon Tabasco
2 tablespoons lemon juice, fresh squeezed & zest
Directions
  1. Put all ingredients in a blender or food processor and combine until chunky or smooth, as desired

  2. Chill (at least an hour) and serve

  3. Add Worcestershire sauce or other flavorings as desired

  4. Serve as a side dish with meat or as a main dish with whole grain rolls
