I have tried variations of this recipe, but this is probably the best so far.

Ingredients
| 80 |
g plain flour |
| 70 |
g oatmeal |
| 10 |
g dried skimmed milk |
| 8 |
g dried egg white |
| 2 |
egg whites |
| 250 |
ml whole milk |
| 10 |
ml sugar syrup |
| 1 |
nectarine |
Directions
- Mix the dry ingredients in a bowl.
- Mix in the (fresh) egg whites and milk and stir well.
- Leave to stand for 5-10 mins just to let the liquids soak into the dried ingredients.
- Fry (with no fats in a good quality non-srick pan) as normal pancakes.
- Drizzle with sugar syrup and serve with slices of nectarine.
- This recipe makes 3 good sized pancakes.
