grilled veggie and mozzarella sandwiches

Ingredients

small eggplant, sliced |
| 1 |
small zucchini, sliced |
| 1 |
small yellow squash, sliced |
| 1 |
tbsp olive oil |
| 14 |
oz ciabatta bread |
| 2 1/2 |
tbsp pesto |
| 2 1/2 |
tbsp tapenade |
| 2 |
roasted red peppers |
| 4 |
oz part skim mozzarella, slices |
| 2 |
tbsp balsamic vinegar |
Directions
- Slice eggplant, zucchini, and squash lengthwise and grill using 1 tbsp olive oil (and Pam if necc). 3-5 minutes on each side until softened.
- Hollow inside of bread to make room for vegetables. Spread pesto on one side of bread, tapenade on other.
- Layer vegetables, red peppers, and mozzarella slices. Drizzle w/ balsamic vinegar. Press top and bottom of sandwich together and wrap tightly in plastic wrap. Place on baking sheet and weigh down w/ heavy skillet. Refrigerate 2 hours to overnight. Unwrap, slice, and serve.
