Yummy side dish for Eric's Crockpot Ribs
| 1/2 | cup Barley |
| 1/2 | cup Quinoa |
| 2 | cups low sodium Beef Broth |
| 4 | cups Water |
| 2 | cups Mushrooms |
| 1/2 | cup Onion |
| 1 | tsp Rosemary |
| 1 | tsp Pepper |
| 2 | tbs Garlic, minced |
| 1 | tbs Olive Oil |
- Sautee Mushrooms, onions, Garlic, Oil, and spices until everything is just cooked through.
- In two separate pots cook each:
- Barley w/ 2 Cups Reduced Sodium Beef Broth, and 1 Cup water. Bring water to a boil, toss in Barley, simmer on low for 1 hour +++ (helps if you soak it overnight first in water)
- Quinoa w/ 3 cups water. Bring water to a boil, toss in Quinoa, simmer on low for 20 minutes.
- Toss the barley, and the quinoa, and the sautee together, heat through.
