Berry almond Quick Bread

Makes 12 servings

healthy muffins

Ingredients
1 1/2 c whole wheat flour
1/4 c soy flour
3/4 c all purpose flour
1 1/2 t baking powder
1 t cinnamon
1/2 t baking soda
1/4 t salt
1 c skim milk
1 T lemon juice
2/3 c brown sugar
2 T margarine
2 T canola oil
2 eggs
1 t vanilla extract
1/2 t almond extract
1/2 c blueberries
1/2 c raspberries
1/2 c blackberries
1/2 c strawberries
1/2 c sliced almonds
Directions
  1. wisk together dry ingredients

  2. whisk eggs, buttermilk, sugar, margarine oil, vanilla and almond in large bowl

  3. Make well in center of dry ingredients. add wet stir until just combined. add berries and almonds. do not over mix. top with toasted almonds. put in greased muffin pans bake 22 - 25 min let cool 10 minutes then transfer to wire rack
