pineapple zucchini loaf

Makes 6 servings

don't forget to add the sugar next time and minus the butter b/c you won't have to glaze it

Ingredients
2 eggs
1 tbsp ground flax seeds
1 tbsp wheat bran
1/2 cup brown sugar
1 teaspoon vanilla extract
1/2 cup unsweetened applesauce
3/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2/3 cup pineapple
1 cup grated zucchini
1 cups all-purpose flour
1/2 teaspoon salt
3/4 teaspoon baking soda
3/4 teaspoon baking powder
3 tbsp butter, salted
Directions
  1. 1. Combine flour, baking powder, baking soda, and salt.

  2. 2. In a large bowl, mix oil, eggs, vanilla, sugar, cinnamon, and nutmeg. Blend in pineapple and zucchini. Stir flour mixture into zucchini mixture. Pour batter into two greased and floured 9 x 5 inch loaf pans.

  3. 3. Bake at 350 degrees F (175 degrees C) for 1 hour. Cool on wire racks.
