Banana Nut Muffins made with Whole Wheat flour, rolled oats, flaxseed meal and walnuts.

cup Whole wheat Flour |
| 1/2 |
cup oatmeal, old fashioned oats |
| 2 |
tbsp flax seed meal (bob's red mill) |
| 1 |
tsp baking soda |
| 1 1/2 |
tsp baking powder |
| 1 |
tsp cinnamon |
| 1 |
teaspoon cloves |
| 1/2 |
tsp nutmeg |
| 1/2 |
tsp salt |
| 2 |
egg whites |
| 2/3 |
cup dark brown sugar, C&H |
| 1/3 |
cup plain yogurt, nonfat |
| 1/2 |
cup milk |
| 1 |
tbsp honey |
| 1 |
tsp vanilla |
| 3 |
bananas, mashed |
| 1/2 |
cup walnut pieces |
Directions
- Preheat oven to 400.
- Grease muffin tin.
- In medium bowl, whisk together dry ingredients.
- In large bowl, Cream egg whites and sugar.
- Mix in vanilla and honey.
- In separate bowl, mash bananas with yogurt, add.
- Add milk.
- Stir in dry ingredients, until just mixed.
- Add walnuts.
- Scoop into muffin tin.
- Bake at 400 for 25-28 minutes.
