Whole Wheat Banana Nut Muffins

Makes 12 servings

Banana Nut Muffins made with Whole Wheat flour, rolled oats, flaxseed meal and walnuts.

Ingredients
1 1/2 cup Whole wheat Flour
1/2 cup oatmeal, old fashioned oats
2 tbsp flax seed meal (bob's red mill)
1 tsp baking soda
1 1/2 tsp baking powder
1 tsp cinnamon
1 teaspoon cloves
1/2 tsp nutmeg
1/2 tsp salt
2 egg whites
2/3 cup dark brown sugar, C&H
1/3 cup plain yogurt, nonfat
1/2 cup milk
1 tbsp honey
1 tsp vanilla
3 bananas, mashed
1/2 cup walnut pieces
Directions
  1. Preheat oven to 400.

  2. Grease muffin tin.

  3. In medium bowl, whisk together dry ingredients.

  4. In large bowl, Cream egg whites and sugar.

  5. Mix in vanilla and honey.

  6. In separate bowl, mash bananas with yogurt, add.

  7. Add milk.

  8. Stir in dry ingredients, until just mixed.

  9. Add walnuts.

  10. Scoop into muffin tin.

  11. Bake at 400 for 25-28 minutes.
