Pretty tasty veggie burgers that you can make yourself. Good for a BBQ where you know vegetarians may be in attendance

Ingredients
| 4 |
oz portabella cap, finely chopped |
| 1 |
medium onion, finely chopped |
| 1 |
medium red pepper, finely chopped |
| 1 |
medium carrot, finely chopped |
| 2 |
cloves garlic, finely chopped |
| 2 |
large eggs |
| 1/2 |
cup smooth peanut butter |
Directions
- Stir all ingredients together until fully combined. Form into 4 balls and press into patties. Wrap in plastic wrap and chill ofr at least 30 minutes. Fry or grill patties for 8 minutes per side on medium/high heat.
