Tasty Boca burgers in a tomato base with a medley of fresh summer vegetables. With would be great with some chicken or shrimp, but I just do not have any in the house!

Ingredients

grams eggplant |
| 110 |
grams mushrooms |
| 2 |
tbsp onion powder |
| 100 |
grams onion, diced |
| 50 |
grams green pepper, diced |
| 1 |
tbsp garlic powder |
| 1 |
tsp oregano |
| 1 |
tbsp olive oil |
| 25 |
ounces tomato, diced |
| 4 |
servings Boca burgers |
| 300 |
grams squash, yellow, sliced |
| 150 |
grams zuchinni, sliced |
Directions
- Boil tomato, eggplant, onions, squash, mushrooms, olive oil and garlic. Simmer for 20 minutes until tomato is reduced.
- Crumble Boca burgers and add to mixture. Simmer until burger pieces are steaming hot.
- Add green pepper, spices and simmer addition 5 minutes.
- Serve hot. Good on pasta, rice or by itself.
