Meatless Summer Medley

Makes 4 servings

Tasty Boca burgers in a tomato base with a medley of fresh summer vegetables. With would be great with some chicken or shrimp, but I just do not have any in the house!

Ingredients
300 grams eggplant
110 grams mushrooms
2 tbsp onion powder
100 grams onion, diced
50 grams green pepper, diced
1 tbsp garlic powder
1 tsp oregano
1 tbsp olive oil
25 ounces tomato, diced
4 servings Boca burgers
300 grams squash, yellow, sliced
150 grams zuchinni, sliced
Directions
  1. Boil tomato, eggplant, onions, squash, mushrooms, olive oil and garlic. Simmer for 20 minutes until tomato is reduced.

  2. Crumble Boca burgers and add to mixture. Simmer until burger pieces are steaming hot.

  3. Add green pepper, spices and simmer addition 5 minutes.

  4. Serve hot. Good on pasta, rice or by itself.
