| 2 | tbs ground cinnamon |
| 1/2 | tsp salt |
| 2 | bananas |
| 2 | egg whites |
| 1/4 | cup |
| 1 | tbsp |
| 1 | tbs vanilla extract |
| 1/4 | cup |
| 1/2 | cup walnuts |
| 1 | tsp nutmeg |
- Preheat oven to 350ºF.
- PAM the muffin tin.
- In food processor or blender, grind walnuts.
- Mix in this order: applesauce, egg whites, molasses, bananas, and vanilla (mix until smooth). Add spices, salt, and baking powders. Mix in oats & oat bran. Fold in coconut.
- Fill muffin liners halfway with batter.
- Sprinkle with sugar or sugar substitute on top if desired.
