Banana Muffins Recipe

Ingredients
1 cup
1 cup
1/2 tsp baking soda
1 tsp baking powder
2 tbs ground cinnamon
1/2 tsp salt
2 bananas
2 egg whites
1/4 cup
1 tbsp
1 tbs vanilla extract
1/4 cup
1/2 cup walnuts
1 tsp nutmeg
Directions
  1. Preheat oven to 350ºF.

  2. PAM the muffin tin.

  3. In food processor or blender, grind walnuts.

  4. Mix in this order: applesauce, egg whites, molasses, bananas, and vanilla (mix until smooth). Add spices, salt, and baking powders. Mix in oats & oat bran. Fold in coconut.

  5. Fill muffin liners halfway with batter.

  6. Sprinkle with sugar or sugar substitute on top if desired.
