| 4 | eggs |
| 100 | grams cottage cheese |
| 1 | onion, finely chopped |
| 1/2 | cup mushrooms, sliced |
| 25 | grams cheddar cheese, shredded |
| 1 | salt |
| 1 | pepper |
| 1 | tablespoon cilantro |
| 1 | tomato, sliced |
- Pre-heat oven to 400.
- Spray pan with Pam.
- Whisk eggs with cottage cheese until well combined.
- Fold in onion, shrooms, cheese, salt, pepper, and cilantro.
- Pour into pan and top with tomatoes.
- Bake for 30 minutes or until done.
