Baked eggplant.

Ingredients

grams eggplant |
| 220 |
grams mushrooms |
| 2 |
tbsp onion powder |
| 1 |
tbsp garlic powder |
| 1 |
tsp oregano |
| 1 |
tbsp olive oil |
| 35 |
ounces tomato, diced |
Directions
- Turn oven on to 400 degrees.
- Slice the eggplant (keep the peel).
- Mix with all the ingredients.
- Spread on a cookie sheet.
- Cook for 40 minutes or until eggplant tears apart easily with a fork.
- Serve hot. Good with toast, small crackers, pasta or rice.
