Reduced Fat, Almost Zero Sodium Baked Eggplant

Makes 4 servings

Baked eggplant.

Ingredients
300 grams eggplant
220 grams mushrooms
2 tbsp onion powder
1 tbsp garlic powder
1 tsp oregano
1 tbsp olive oil
35 ounces tomato, diced
Directions
  1. Turn oven on to 400 degrees.

  2. Slice the eggplant (keep the peel).

  3. Mix with all the ingredients.

  4. Spread on a cookie sheet.

  5. Cook for 40 minutes or until eggplant tears apart easily with a fork.

  6. Serve hot. Good with toast, small crackers, pasta or rice.
