Liquid Nitrogen Ice Cream Recipe

A very yummy liquid nitrogen demonstration that we use for science camps at the U of L. Kids can help with the stirring as long as they've got proper safety attire (thick gloves on both hands!)

Ingredients
3 l half-and-half
3 l whipping cream
2 cups sugar
9 eggs
Directions
  1. In a very large metal bowl, whisk together cream, half-and-half and sugar.

  2. Crack eggs into bowl, whisking until blended.

  3. Add any flavourings desired (vanilla extract, chocolate syrup, a jar of raspberry or strawberrry jam, candies, etc.) and mix well.

  4. Make sure everyone close to the bowl is wearing oven gloves, long sleeves and safety glasses. While one person stirs with a WOODEN spoon, the other adds liquid nitrogen, a bit at a time until ice cream consistency is reached.

  5. Serve immediately. This ice cream will melt within about 20-30 minutes. Note that ice cream can be made without eggs; however, the extreme cold from the liquid nitrogen "cooks" them as effectively as heat would.
