Sour Cherry Jam

Makes 32 servings

Homemade jam using fresh sour cherries.

Ingredients
4 cups sour cherries
1 1/2 cups sugar
1 lemon, juiced and zested
Directions
  1. Pit cherries. Roughly chop 3 cups of the cherries, leaving the rest whole. Cook the cherries and lemon juice and zest until the cherries are wilted and soft. Measure the cooked cherries and their juices, and add sugar totaling 3/4 of the measured volume (so if you have 2 cups of cooked cherries and juices, add 1.5 cups of sugar). Put a plate in the freezer. Cook over moderate heat, stirring constantly. When the foaming subsides and the mixture thickens, turn off the heat, and test the jam by putting a little on the frozen plate. Put the plate back in the freezer for about a minute, then nudge it with your fingernail. If it wrinkles, the jam is done. If not, continue cooking until it's done.
