red bean and rolled oats
| 1 | tbsp. soy sauce |
| 1 | tbsp. ketchup |
| 1 | cup onions |
| 4 | cloves garlic |
| 1/2 | cup carrot |
| 1 1/2 | tsp. chili powder |
| 1 | tsp. ground cumin |
| 3 | cups kidney beans |
| 2 | tbsp. dijon mustard |
| 1 1/2 | cups rolled oats |
- cook kidney bean ahead of time (no added salt).
- chop onions.
- mince or press garlic.
- peel and grate carrots.
- saute onions and garlic for 5 minutes in a small of oil.
- add carrots, chili powder and cumin, and cook on low heat for 5 minutes.
- set aside.
- mash beans.
- add mustard, soy sauce, ketchup (or tomato paste) and the sauteed veggies.
- mix in the oats.
- form the mix into patties.
- cook burgers in an non-stick pan for 5 to 8 minutes on each side.
- serve on a bun with choice of condiments.
- makes 6 to 8 servings.
