This banana bread turns out just like Mom's, but vegan! Delicious, and a bit healthier than Mom's too.

Ingredients
| 2 |
cups all-purpose flour |
| 1 |
tsp baking soda |
| 1/4 |
tsp salt |
| 1/2 |
cup Smart Balance Omega spread |
| 3/4 |
cup brown sugar |
| 3 |
tsp Ener-G Foods egg replacer , (2 eggs' worth - prepared with water) |
| 2 1/3 |
cups bananas, mashed & overripe |
Directions
- Preheat oven to 350 degrees. Lightly grease 9x5 inch loaf pan. In a large bowl, combine flour, baking soda, and salt.
- In a separate bowl, cream together Smart Balance and brown sugar. Stir in prepared Ener-G egg replacer and mashed bananas until well blended.
- Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
- Bake in preheated oven for 45 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto wire rack.
