Banana Bread [VEGAN]

Makes 8 servings

This banana bread turns out just like Mom's, but vegan! Delicious, and a bit healthier than Mom's too.

Ingredients
2 cups all-purpose flour
1 tsp baking soda
1/4 tsp salt
1/2 cup Smart Balance Omega spread
3/4 cup brown sugar
3 tsp Ener-G Foods egg replacer , (2 eggs' worth - prepared with water)
2 1/3 cups bananas, mashed & overripe
Directions
  1. Preheat oven to 350 degrees. Lightly grease 9x5 inch loaf pan. In a large bowl, combine flour, baking soda, and salt.

  2. In a separate bowl, cream together Smart Balance and brown sugar. Stir in prepared Ener-G egg replacer and mashed bananas until well blended.

  3. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.

  4. Bake in preheated oven for 45 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto wire rack.
