Honey-Oat Bran Muffins (with Pecans and Chocolate Chips) Recipe

Yummy muffins with lots of fiber - and chocolate too! :-)

Ingredients
1 cup oats
3/4 cup wheat germ
1/2 cup wheat bran
1/4 tsp. salt
1/2 tsp. cinnamon
1 cup buttermilk
1/2 cup corn oil
1/3 cup liquid honey
2 eggs, beaten
3/4 cup whole wheat flour (or all-purpose)
2 tsp. baking powder
1 tsp. baking soda
1/2 cup pecans, roughly chopped
1/2 cup chocolate chips
1 tsp. PAM
Directions
  1. Preheat oven to 375 F.

  2. In a large bowl, combine oats, wheat germ, bran, salt and cinnamon. To these, add buttermilk and mix thoroughly. Let sit for 15 minutes.

  3. Add oil, honey and eggs to oat mixture.

  4. In a separate bowl, combine flour, baking powder and baking soda.

  5. Add flour mixture to oat mixture, stirring until just combined.

  6. Add pecans and chocolate chips, stirring until just combined.

  7. Spray muffin tins with PAM then fill with batter.

  8. Bake at 375 F for 20-25 minutes.
