Honey-Oat Bran Muffins (with Pecans and Chocolate Chips) Recipe

Yummy muffins with lots of fiber - and chocolate too! :-)
| 1 | cup oats |
| 3/4 | cup wheat germ |
| 1/2 | cup wheat bran |
| 1/4 | tsp. salt |
| 1/2 | tsp. cinnamon |
| 1 | cup buttermilk |
| 1/2 | cup corn oil |
| 1/3 | cup liquid honey |
| 2 | eggs, beaten |
| 3/4 | cup whole wheat flour (or all-purpose) |
| 2 | tsp. baking powder |
| 1 | tsp. baking soda |
| 1/2 | cup pecans, roughly chopped |
| 1/2 | cup chocolate chips |
| 1 | tsp. PAM |
- Preheat oven to 375 F.
- In a large bowl, combine oats, wheat germ, bran, salt and cinnamon. To these, add buttermilk and mix thoroughly. Let sit for 15 minutes.
- Add oil, honey and eggs to oat mixture.
- In a separate bowl, combine flour, baking powder and baking soda.
- Add flour mixture to oat mixture, stirring until just combined.
- Add pecans and chocolate chips, stirring until just combined.
- Spray muffin tins with PAM then fill with batter.
- Bake at 375 F for 20-25 minutes.
