London Broil Recipe

Got this outa the South Beach Diet cookbook... soo good!

Ingredients
2 tbsp extra-virgin olive oil
1/2 cup dry red wine
3 cloves garlic, minced
1 tbsp chopped oregano
3 tbsp minced parsley
1 tsp bay leaf
1/2 tsp ground black pepper
1 1/2 pound sirloin
Directions
  1. Combine all ingredients except for meat to make the marinade.

  2. Place steak in a deep bowl and pour on marinade.

  3. Turn once to coat both sides, cover, and refrigerate for at least 4 hours, preferably overnight.

  4. When ready to serve, preheat broiler or prepare charcoal grill.

  5. Broil for about 5 minutes on each side or until a thermometer inserted into the middle registers 145 F (for medium-rare).

  6. Cut meat into thin, diagonal slices across the grain.
