A layered casserole that tastes like tamales
|
Ingredients
| 6 |
cups water |
| 1 |
teaspoon salt |
| 2 |
cups cornmeal |
| 2 |
tablespoons canola oil |
| 1 |
pound ground beef, lean |
| 1 |
cup onion, chopped |
| 2 |
cups tomatoes, canned |
Directions
- Bring the water to a boil
- Add salt and slowly stir in the cornmeal
- Cook 15 minutes, stirring, until thick
- Brown the ground beef and season with salt & cayenne pepper and ground cumin
- Add the peppers and onions and cook until soft
- Add the tomatoes and season to taste
- In a prepared baking pan, start with a layer of cornmeal, then a layer of the meat and tomato mixture, then more cornmeal.
- Repeat until the pan is full
- Bake at 400 for 20 to 30 minutes
- Serve hot
