Egg Fried Rice Recipe

Makes 4 servings


Lower calorie fried rice with lots of vegetables, egg, and a little spiciness

Ingredients
3/4 cup white rice
3 eggs
1/4 cup broccoli
1/4 cup cauliflower
1/4 cup red bell pepper
1/4 cup diced onion
1 tablespoon soy sauce
1 tablespoon vegetable oil
1 cup frozen peas
2 cloves garlic
1 tablespoon red pepper flakes
Directions
  1. Cook rice according to directions

  2. Saute garlic, red pepper flakes, and onion in oil; add in remaining vegetables and cook for 5 minutes

  3. Scramble egg and cook separately until almost fully cooked; add to vegetable mixture

  4. Stir in rice with vegetables; add soy sauce

  5. Enjoy!
