Lower calorie fried rice with lots of vegetables, egg, and a little spiciness
| 3/4 | cup white rice |
| 3 | eggs |
| 1/4 | cup broccoli |
| 1/4 | cup cauliflower |
| 1/4 | cup red bell pepper |
| 1/4 | cup diced onion |
| 1 | tablespoon soy sauce |
| 1 | tablespoon vegetable oil |
| 1 | cup frozen peas |
| 2 | cloves garlic |
| 1 | tablespoon red pepper flakes |
- Cook rice according to directions
- Saute garlic, red pepper flakes, and onion in oil; add in remaining vegetables and cook for 5 minutes
- Scramble egg and cook separately until almost fully cooked; add to vegetable mixture
- Stir in rice with vegetables; add soy sauce
- Enjoy!
