One of the classics made with Splenda (mind you it doens't rise well so expect a DENSE cake)
| 1 1/4 | cup Splenda Granular |
| 4 | Egg Whites |
| 1 | Egg |
| 3/4 | cup Water |
| 2 1/4 | cup |
| 1/2 | tsp Salt |
| 2 | tbs Vanilla |
| 1/2 | cup |
| 3/4 | cup Cocoa Powder |
| 1 | tsp Baking Soda |
| 1 | tbs Baking Powder |
| 3/4 | cup |
| 1 | cup Fat-Free Cool Whip |
| 4 | tbs |
- Heat oven to 375
- Mix splenda, and soy milk
- beat eggs, and add gradually to the sugar mix
- cook cocoa and water together 1 minute, then add baking soda & powder and set aside to cool.
- Slowly add wet and dry ingredients together
- Mix until smooth
- Bake for 30 mins or until toothpick comes out clean
- TIP: I like using sugar free preserves as the layer inbetween and icing the cake with cool whip.
