Chicken and Garlic Broccoli

Makes 4 servings

A light and flavorful way to enjoy broccoli.

Ingredients
1 tablespoon olive oil, extra virgin
1 tablespoon garlic, chopped
2 bunches broccoli
1 1/2 cups 99% fat free chicken broth
Directions
  1. Peel and dice the garlic.

  2. Chop the broccoli.

  3. Heat the oil over medium heat in a large skillet.

  4. When the oil is warm, add the chopped garlic and cook for 1 minute.

  5. Add the broccoli to the oil and garlic. Cook, stirring occasionally, for 2 - 3 minutes, being careful not to let the garlic burn.

  6. Add the chicken broth to the pan. Let the broccoli simmer in the broth for 15 - 20 minutes, or until softened.
