Black-Eyed Pea Salsa Recipe

A simple vegan salsa

Ingredients
1 cup black-eyed peas, fresh
8 oz diced tomato
2 oz diced peppers, habanero
1 large onion
1 ear corn
Directions
  1. Cut corn from ear.

  2. Boil black-eyed peas and corn, drain and let cool.

  3. Dice tomato, pepper and onion.

  4. Mix and refrigerate for 24 hours.
