A simple vegan salsa
| 1 | cup black-eyed peas, fresh |
| 8 | oz diced tomato |
| 2 | oz diced peppers, habanero |
| 1 | large onion |
| 1 | ear corn |
- Cut corn from ear.
- Boil black-eyed peas and corn, drain and let cool.
- Dice tomato, pepper and onion.
- Mix and refrigerate for 24 hours.
