Cucumber Salad Recipe

Makes 1 serving


Yummy light summer salad great for dinner side or luch main dish.

Ingredients
1 Cucumber, peeled sliced
8 Grape Tomatoes, quartered
1 scallion, diced
1/4 c Apple cider vinegar
1/4 tsp sea salt
1/4 tsp fresh ground black pepper
Directions
  1. Peel 1/2 cucumber, slice into rounds and half the rounds, add to serving bowl.

  2. Cut the grape tomates in half and toss with cucumbers.

  3. Rough chop the scallion and add to cucmbers and tomatoes.

  4. Add the vinegar, salt and pepper and lightly toss together.

  5. Refrigerate the salad for at lest one hour before serving.
