Yummy light summer salad great for dinner side or luch main dish.
| 1 | Cucumber, peeled sliced |
| 8 | Grape Tomatoes, quartered |
| 1 | scallion, diced |
| 1/4 | c Apple cider vinegar |
| 1/4 | tsp sea salt |
| 1/4 | tsp fresh ground black pepper |
- Peel 1/2 cucumber, slice into rounds and half the rounds, add to serving bowl.
- Cut the grape tomates in half and toss with cucumbers.
- Rough chop the scallion and add to cucmbers and tomatoes.
- Add the vinegar, salt and pepper and lightly toss together.
- Refrigerate the salad for at lest one hour before serving.
