| 2 | cups broccoli florets |
| 1/2 | cup ricotta, light |
| 1/2 | cup fat free cottage cheese |
| 1 | egg |
| 1/4 | cup whole wheat flour |
| 1/2 | tsp baking powder |
| 2 | tbsp Parmesan cheese |
| 1 | tbsp butter |
| 1/4 | cup light cheddar cheese, shredded |
- mix all ingredients together except broccoli and cheddar cheese.
- sprinkle broccoli on a greased pie pan.
- pour mixture over broccoli.
- sprinkle quiche with cheddar cheese.
- bake @ 350 for 35-45 minutes, until toothpick comes out clean.
