Crustless Broccoli Quiche Recipe

Low Carb yum

Ingredients
2 cups broccoli florets
1/2 cup ricotta, light
1/2 cup fat free cottage cheese
1 egg
1/4 cup whole wheat flour
1/2 tsp baking powder
2 tbsp Parmesan cheese
1 tbsp butter
1/4 cup light cheddar cheese, shredded
Directions
  1. mix all ingredients together except broccoli and cheddar cheese.

  2. sprinkle broccoli on a greased pie pan.

  3. pour mixture over broccoli.

  4. sprinkle quiche with cheddar cheese.

  5. bake @ 350 for 35-45 minutes, until toothpick comes out clean.
