Kalderetang Kambing

Ingredients
2 1/5 lb lamb
1/2 tsp salt
1/2 tsp pepper
1 cup vinegar
1 clove garlic
1/2 cup oil
3 onions
8 cups stock
1 1/10 lb beef liver
1/4 teaspoon paprika
1 cup grated cheese
Directions
  1. In a bowl, marinate meat in salt and pepper,

  2. vinegar and garlic for 2- 4 hours (more if desired).

  3. In a casserole, brown meat and set aside.

  4. Saute garlic, onion, tomatoes, and add in tomato paste, then stir well.

  5. Add in hot chili pepper and stock.

  6. Add in the browned meat and bring to a boil.

  7. Allow simmering until meat is cooked and tender.

  8. Add in minced liver and Spanish paprika.

  9. Last, add the bell peppers, olives, chickpeas and grated cheese.
