Crustless Feta and Cheddar Quiche Recipe

Ingredients
4 eggs
1/3 c. whole wheat flour
4 cloves garlic
1 tbsp thyme
1/4 ground pepper
1/8 tsp kosher salt
1 1/2 c. low-fat cottage cheese
10 oz. frozen broccoli
1 c. crumbled feta
1 c. shredded reduced-fat cheddar cheese
Directions
  1. preheat oven to 350.. coat a pie plate

  2. combine eggs, flour, garlic, thyme, pepper, salt. stir in cottage cheese, broccoli, feta, cheddar. spoon into pie plate.

  3. bake 40-45 minutes until knife comes out clean. cool on wire rack 5-10 minutes.
