Lentil Stew

Makes 6 servings

Cooks.com Lentil stew

Ingredients
1 cup lentils, dry
6 cup water
1 cup celery, chopped
1 cup carrots, chopped
1 cup potatoes, unpeeled, chopped
2 med. onions, chopped
1 salt to taste
1 Sweet basil, to taste
2 cloves garlic, diced
2 cup tomatoes, stewed
Directions
  1. Cook lentils for 30 minutes.

  2. Add vegetables and seasonings.

  3. Cook another 30 minutes until vegetables are done.

  4. Add tomatoes; simmer until tomatoes are hot and cooked throughout stew.

  5. Serve immediately, next day or use in thermos. Can be frozen in small containers for future lunches.
