Sweet and sour with a hint of spice, depending on how much cayenne is added. Fast and easy preparation. Recipe makes 4 small servings.

Ingredients

chicken breast, boneless skinless |
| 1 |
dash of salt |
| 1 |
dash cayenne pepper |
| 1 |
tbsp flour |
| 1 |
tbsp olive oil |
| 1/2 |
onion, chopped |
| 1 |
green bell pepper, chopped |
| 6 |
oz pineapple juice |
| 8 |
oz pineapple, crushed |
| 4 |
oz mushrooms, canned |
| 1/4 |
c low sodium soy sauce |
| 1/4 |
c water |
| 1/4 |
c vinegar |
| 1/4 |
c honey |
| 3/4 |
c brown rice |
Directions
- Cook rice according to directions. 3/4 cups of raw brown rice will yield 2 - 2 1/4 cups cooked.
- Sprinkle chicken with salt, toss with flour.
- Brown in oil in large skillet over medium-high heat.
- Add onions and pineapple juice, simmer for 5 minutes.
- Add soy sauce, water, vinegar and honey, simmer for additional 20 minutes.
- Add crushed pineapple, mushrooms and green pepper, simmer another 5 minutes.
- Serve over rice.
