| 5 | jalapeno peppers |
| 2 | oz cream cheese fat free |
| 1 | oz fat free cheddar |
| 1 | tbsp egg beaters |
| 1 | tbsp bread crumbs |
- Bring medium size pot half full to a boil
- Cut jalapenos in half and remove seeds and white veins
- Add to boiling water and simmer for 5 minutes or until peppers start to soften
- Remove from water and let them dreain and dry on a towel
- Preheat oven to 400 degreas
- In a small bowl mix softened cream cheese and chedder cheese
- Once peppers cool, fill each have with cheese mixture
- Dip cheese side in egg beaters and then in bread crumbs, pressing so that they stick well
- Spray baking sheet with cooking spray and bake 20-30 minutes
