| 7 | oz. brown rice (2 bags -- cooked) |
| 1 | lb ground turkey |
| 1/2 | cup green onions(scallions), sliced |
| 14 1/2 | oz. diced tomatoes, undrained |
| 1/2 | jalapeno pepper, seeded and finely chopped* |
| 1 | tbsp chili powder |
| 1 | cup cheese (Mexican 4 cheese blend) |
| 1/4 | cup fresh or parsley, chopped |
- Prepare rice according to package directions.
- Spray a large skillet with cooking spray. Crumble ground turkey into the skillet and cook over medium heat until browned.
- Add onion, sauté till tender.
- Stir in canned tomatoes, jalapeno, chili powder and rice.
- Simmer until liquid is absorbed, stir occasionally.
- Sprinkle with cheese and parsley.
