Turkey: Ground with Spicy Brown Rice Recipe

Ingredients
7 oz. brown rice (2 bags -- cooked)
1 lb ground turkey
1/2 cup green onions(scallions), sliced
14 1/2 oz. diced tomatoes, undrained
1/2 jalapeno pepper, seeded and finely chopped*
1 tbsp chili powder
1 cup cheese (Mexican 4 cheese blend)
1/4 cup fresh or parsley, chopped
Directions
  1. Prepare rice according to package directions.

  2. Spray a large skillet with cooking spray. Crumble ground turkey into the skillet and cook over medium heat until browned.

  3. Add onion, sauté till tender.

  4. Stir in canned tomatoes, jalapeno, chili powder and rice.

  5. Simmer until liquid is absorbed, stir occasionally.

  6. Sprinkle with cheese and parsley.
