Appetizer

Ingredients
1 medium tomato
4 scallions chopped
1 clove garlic, minced
1/2 cup fresh lemon juice
1/4 cup olive oil
2 tbsp mint, chopped
1 1/2 cups parsley, chopped
2 cups cooked quinoa
Directions
  1. Cook Quinoa according to directions.

  2. Mix all ingreadients and chill for 1 hour.
