Healthy Monkey Muffins Recipe

Makes 12 servings


Healthy banana wheat bran muffins

Ingredients
1 1/2 c Bran Flakes
1 c mashed bananas
1/2 c skim milk
2 egg whites
3 tbs unsweetened applesauce
1 c soy flour
4 tbs SPLENDA No Calorie
1 tsp baking powder
3/4 tsp baking soda
1/8 tsp ground nutmeg
Directions
  1. Preheat oven to 400F.

  2. Grease or paper line 12 2.5" muffin cups.

  3. Combine Bran Flakes, banana, milk, eggs, and applesauce in bowl; mix well.

  4. Let stand for 5 minutes, stir to break up flakes.

  5. Combine flour, splenda, baking powder, baking soda, and nutmeg in a separate bowl.

  6. Stir in dry mix to wet mix. Do not over beat. Make this step happen quickly.

  7. Immediately pour mixture evenly among prepared muffin cups.

  8. Bake for 20 - 25 minutes or until tester inserted in center comes out clean.

  9. Serve your yummy muffins :-)
