Healthy banana wheat bran muffins
| 1 1/2 | c Bran Flakes |
| 1 | c mashed bananas |
| 1/2 | c skim milk |
| 2 | egg whites |
| 3 | tbs unsweetened applesauce |
| 1 | c soy flour |
| 4 | tbs SPLENDA No Calorie |
| 1 | tsp baking powder |
| 3/4 | tsp baking soda |
| 1/8 | tsp ground nutmeg |
- Preheat oven to 400F.
- Grease or paper line 12 2.5" muffin cups.
- Combine Bran Flakes, banana, milk, eggs, and applesauce in bowl; mix well.
- Let stand for 5 minutes, stir to break up flakes.
- Combine flour, splenda, baking powder, baking soda, and nutmeg in a separate bowl.
- Stir in dry mix to wet mix. Do not over beat. Make this step happen quickly.
- Immediately pour mixture evenly among prepared muffin cups.
- Bake for 20 - 25 minutes or until tester inserted in center comes out clean.
- Serve your yummy muffins :-)
