Raisin Tea Buns (Scones in the UK)

Makes 25 servings

These tea buns are light and fluffy - delicious recipe ! Modified a little, but can be modified more with only WW flour and splenda.

Ingredients
2 cups whole wheat flour
2 cups all-purpose flour
1/2 cup butter
1/4 cup white sugar
1/4 cup splenda
1 egg
1 1/4 cup skim milk
1 cup coconut, shredded
2 cups raisin
4 tsp baking powder
Directions
  1. Combine flour, sugar and baking powder.

  2. Add butter, mixing with your hands until no lumps remain.

  3. Add coconut and raisins.

  4. Make a well in the middle and add milk and egg. Mix into a hard dough.

  5. Roll out on flat surface and roll dough to about 1 in thick, cut into 2 in circles.

  6. Place on ungreased cookie sheet and bake at 400 F for about 12-15 minutes or until top is golden brown. enjoy :)
