The Italians call this contrasting mixture of yellow and green pasta "straw and hay."

Ingredients
| 4 |
oz dried fettuccine |
| 4 |
oz dried spinach fettuccine |
| 1 |
oz scallions |
| 4 |
oz red pepper, finely chopped |
| 3 |
T butter |
| 6 |
oz shitake mushrooms, sliced |
| 1 |
c light cream |
| 1/4 |
c parmesan cheese, grated |
| 1 |

Directions
- In a large saucepan bring 12 cups of water to boiling. Add pasta. Reduce heat slightly. Boil, uncovered, for 8 to 10 minutes. Stir occasionally. Drain immediately. Return pasta to warm pan.
- In large frying pan, cook and stir scallions and red pepper in hot butter over medium-high heat for 2 minutes. Add mushrooms, cook and stir for 2 minutes more, or till tender. Stir in cream and heat through, but do not let it boil.
- Pour mushroom-cream mixture over pasta and toss to coat pasta. Add parmesan and toss. Transfer to a warm serving dish. Sprinkle with pepper. Serve immediately.
