Kumara and Tofu Curry Recipe

Makes 1 serving


Warming Curry for the Vegetarians. Note: You may like to add 200ml of Coconut Milk to this recipe if desired.

Ingredients
1/4 tbsp Olive Oil
1/4 tbsp Curry Powder
1/4 onion
50 ml Organic Vegetable broth
1/4 tbsp fish sauce
1/4 tbsp tomato paste
70 g Kumara
75 g Firm Tofu
50 g green beans
Directions
  1. Heat the oil in a deep frying pan over high heat.

  2. Add curry powder and onion and cook for 2-3 minutes or until onion has softened.

  3. Add the stock, fish sauce, tomato paste, Kumara and Tofu (add coconut milk here aswell if you desire).

  4. Reduce heat to low and cook for a further 25 - 30mins or until Kumara has cooked through.

  5. Add the beans and cook for 1-2 mins until tender.

  6. Serve with steamed Rice, mint leaves and a wedge of lemon.

  7. (Note: Calorie information is for Curry only; Rice is not included in the nutritional information).

  8. This dish can also be made with Chicken, white fish, beef or prawns).
