Warming Curry for the Vegetarians. Note: You may like to add 200ml of Coconut Milk to this recipe if desired.
| 1/4 | tbsp Olive Oil |
| 1/4 | tbsp Curry Powder |
| 1/4 | onion |
| 50 | ml Organic Vegetable broth |
| 1/4 | tbsp fish sauce |
| 1/4 | tbsp tomato paste |
| 70 | g Kumara |
| 75 | g Firm Tofu |
| 50 | g green beans |
- Heat the oil in a deep frying pan over high heat.
- Add curry powder and onion and cook for 2-3 minutes or until onion has softened.
- Add the stock, fish sauce, tomato paste, Kumara and Tofu (add coconut milk here aswell if you desire).
- Reduce heat to low and cook for a further 25 - 30mins or until Kumara has cooked through.
- Add the beans and cook for 1-2 mins until tender.
- Serve with steamed Rice, mint leaves and a wedge of lemon.

- This dish can also be made with Chicken, white fish, beef or prawns).
