High Fiber Energy Muffins Recipe

These healthy muffins combine whole wheat flour, wheat germ, raisin bran, applesauce, brown sugar & a little butter, flavored with cinnamon

Ingredients
1/2 cup flour
1/2 cup whole wheat flour
1/3 cup wheat germ
1/2 tsp cinnamon
1 tbsp baking powder
1/4 tsp salt
2 cups raisin bran
1/3 cup raisins
1 cup skim milk
1 egg
2/3 cup applesauce
1/3 cup brown sugar
2 tbsp butter
Directions
  1. Prepare muffin tin with paper liners, or smear with shortening. Mix flours, wheat germ, cinnamon, baking powder, salt, cereal, dates or raisins, and milk in large bowl; let it stand for 5 minutes. Then combine and stir in egg, applesauce, brown sugar, and butter. Stir just until moistened. Divide batter into 12 muffin cups and bake at 400 degrees for 15-18 minutes, or until golden. Optional: sprinkle a little cinnamon-sugar on the tops before they go in the oven.

  2. Notes: I creating this recipe for my husband so he could have something healthy and easy to eat in the car on his way to work in the mornings. My 1 year old daughter also eats them and, boy, can she inhale them! I keep my freezer stocked with these tasty low-fat muffins.
