Chicken Veggie Barley Soup Recipe

Makes 8 servings


lunch or dinner. I actually use 1 cup of quaker quick cooking barley...equates to 3/4 cup regular pearled barley for nutritional info.

Ingredients
1/2 lbs chicken breast, cooked and cubed or shredded
3/4 cups barley quick cooking
3 cups (2 cans) veg-all mixed vegetables
4 cups low sodium vegetable broth
40 g (1 medium stalk ) celery, sliced
1/2 tsp garlic, minced
2 cups canned tomatoes, diced
Directions
  1. Place barley, celery, and broth in large pot.

  2. Cover and bring to boil.

  3. Reduce heat and simmer 10 minutes.

  4. Add remaining ingredients and simmer 20-35 minutes.

  5. Add any spices you like when you add veggies.

  6. Serve hot.
