Spinach Quiche

Makes 8 servings

Quick and easy spinach quiche

Ingredients
1 box of Frozen Chopped Spinach
1 tablespoon of Olive Oil
2 cloves of Fresh Garlic
1/2 teaspoon black pepper
1 crust Frozen, Ready-to-bake
2 cups Sargento Reduced Fat Mozzarella Shredded Cheese
1/4 cup of grated parmesean cheese
4 eggs
1/4 cup skim milk
Directions
  1. Take out Pie Crust and set aside

  2. Preheat oven to 375

  3. Defrost Spinach and squeeze out all of the water

  4. Saute Spinach, Garlic and Oil for 3-5 minutes, then add Black Pepper

  5. Add Spinach mixture to pie crust, let cool for 5 minutes then add Shredded Mozzarella

  6. In a mixing bowl, combine eggs and milk (add enough milk like you would be making scrambled eggs), then add Parmesan Cheese

  7. Pour egg mixture over Spinach and mix together with a fork

  8. Bake for 35-45 minutes or until the top starts to brown (if the crust edges start to burn before quiche is done, cover edges with aluminum foil)
