Chicken Carbonara W/ Asparagus and Mushrooms Recipe

Makes 6 servings


Based on a 1/2 cup of pasta & sauce per serving.

Ingredients
1 Chicken Breast, Meat Only - Cooked, Roasted
20 spears Asparagus - Cooked, Boiled, Drained
10 large mushrooms
3 medium slices bacon
1 can chicken Broth
2 cups Alfredo sauce
3 cups Rotini
2 tbsp lemon juice
2 cloves garlic, crushed
1 tbsp olive oil
Directions
  1. Mix lemon juice, crushed garlic, oil in a dish and add chicken. Allow to marinate for ~30 min.

  2. Place chicken on baking sheet and cook at 400F for 30 min or until cooked through.

  3. Fry bacon & drain fat - put aside.

  4. Saute mushrooms.

  5. Steam aspargus until al dente.

  6. Cook pasta to desired doneness.

  7. In a large saucepan add alfredo sauce, bacon and chicken broth - simmer over med-low heat until warm.

  8. Remove chicken from oven and chop into bite sized pieces.

  9. Toss chicken, asparagus, sauce and pasta.
