Chicken Curry with Apples Recipe

chicken, rice, apples

Ingredients
1 tbs canola oil
1 pound chicken breast
3 medium granny smith apples
1 large yellow onion
5 garlic cloves
2 tbs curry powder
1 1/2 tsp cumin
1/2 cup raisins
5 cups chicken broth
2 cups brown rice, uncooked
Directions
  1. In a large pot, healt canola oil. Brown chicken in oil (baked 10 minutes before) Add apples, onion, garlic, curry and cumin. Saute, stirring, 5 minutes. Add broth and raisins bring to a boil. Add rice and chicken. Cover , reduce heat and simmer until rice is tender ~60 min

  2. Serve with chutney, chopped peanuts, toasted coconut, cilantro or sliced scallions.
