| 1 | tbs canola oil |
| 1 | pound chicken breast |
| 3 | medium granny smith apples |
| 1 | large yellow onion |
| 5 | garlic cloves |
| 2 | tbs curry powder |
| 1 1/2 | tsp cumin |
| 1/2 | cup raisins |
| 5 | cups chicken broth |
| 2 | cups brown rice, uncooked |
- In a large pot, healt canola oil. Brown chicken in oil (baked 10 minutes before) Add apples, onion, garlic, curry and cumin. Saute, stirring, 5 minutes. Add broth and raisins bring to a boil. Add rice and chicken. Cover , reduce heat and simmer until rice is tender ~60 min
- Serve with chutney, chopped peanuts, toasted coconut, cilantro or sliced scallions.
