I created this recipe one day when I was feeling adventurous. If you like a cookie that's not super-sweet but JUST RIGHT, this is it. Has a cake-like consistency.

Ingredients

c butter, softened |
| 3/4 |
c white sugar |
| 1 1/2 |
c flour |
| 1/2 |
tsp baking soda |
| 1/2 |
tsp salt |
| 1 |
large egg |
| 1 |
tsp vanilla extract |
| 1 |
tsp rum extract |
| 2 |
tsp lemon peel |
| 1/2 |
c sweetened coconut flakes |
| 1 |
c pineapple tidbits in juice , 1/3 of liquid in can set aside |
Directions
- Preheat oven to 375F.
- In a medium-sized bowl, cream together butter and sugar. Stir in egg, vanilla, rum, lemon peel, pineapple w/reserved liquid and coconut. In a separate bowl, sift together flour, baking soda, and salt. Gently fold into wet mixture. Drop by heaping teaspoonfuls onto an ungreased cookie sheet about 2 inches apart.
- Bake 9 minutes or until bottoms turn light golden brown; tops should still be light. Transfer to wire cooling racks until completely cool. Store in an airtight container to keep the cookies soft and moist.
