Beef stew

Ingredients
3 tablespoons olive oil
1 lb beef shank
1 medium yellow onion, diced
4 garlic cloves
6 cups beef broth
2 ears corn, husked and cut into 6 wheels
2 medium carrots, sliced
8 oz green beans
1 medium zucchini
1/2 red onion, chopped
2 tablespoons chopped mint
Directions
Heat oil in large pot and brown beef shank. Remove beef shank. Lower heat to medium and saute onion and garlic in pot until softened. Return beef shank to pot and add broth. Cook 1 hour on simmer. Add corn wheels and cook for 30 minutes. Add carrots and cook 20 or 30 minutes. Add green beans and zucchini and cook until tender, about 5 to 10 minutes. Remove beef shank and cut meat into bite-size pieces discarding the bone. Add mint and red onion.
