Makes 6 servings

PREP: 10 min BAKE: 20 min TOTAL: 30 min

Ingredients
1 lb extra lean ground beef
2 cups mashed potatoes, hot
4 oz neufchatel cream cheese, cubed
8 oz shredded cheese
2 cloves garlic, minced
4 cups frozen mixed vegetables, thawed
1 cup beef gravy
Directions
  1. Preheat oven to 375

  2. Brown meat in large skillet, drain.

  3. Mix potatoes, cream cheese, 1/2 cup of shredded cheese, and garlic until well blended.

  4. Stir vegetables and gravy into meat.

  5. Spoon into 9-inch square baking dish

  6. Cover with potato mixture. Don't worry about it being perfectly even - them more rustic it looks, the better

  7. Sprinkle with remaining 1/2 cup shredded cheese

  8. Bake for 20 minutes, or until heated through

  9. SHORTCUT: Use instant mashed potatoes - prepare as directed on package, omitting milk. This way the potatoes stay fluffy when you add the cream cheese
