Cinnamon-Raisin Bread

Makes 30 servings

Yum & less fat and cals with few sugars!!! Makes two loaves!!

Ingredients
3 cups Whole Wheat Flour
1 tbs Baking Powder
1 tsp Baking Soda
1 tbs Imitation Vanilla Extract
1 package Yeast
4 tbs Cinnamon
1/2 cup Applesauce
4 Egg Whites
1/2 cup Unsweetened Soy Milk
1/2 cup Splenda Brown Sugar
1 cup Splenda
1 cup Raisins
Directions
  1. Mix together the wet & dry seperately. Allow the yeast packet to dissolve in warm water for about 5-10 mins. Mix in with the flour first, then add wet ingredients and layer wet and dry. Mix well & add raisins. Mix well.

  2. Preheat the oven to 350.

  3. Knead the bread on a floured countertop for 3 mins (NO MORE!!)

  4. Place in a bowl and cover to let rise for 30-45 mins

  5. Punch down

  6. Roll out flat like you're making cookies

  7. Sprinkle with cinnamon, brown sugar & a little flour

  8. Cut the dough in two pieces

  9. Roll up each piece into a long tube

  10. Tuck the sides under and plop it in the bread pan (I like glass with PAM)

  11. Let it rise for another 10 mins in the pan

  12. Bake it for 45-60 mins :)

  13. Voila!
