vegetarian pasta dish
| 8 | oz whole wheat pasta |
| 1/4 | cup olive oil |
| 2 | tbsp garlic, crushed |
| 1 | onion, quartered and sliced |
| 8 | oz mushrooms, sliced |
| 8 | oz spinach |
| 2 | tbsp pine nuts |
| 6 | tbsp white wine |
| 1 | tbsp parmesan |
- Cook pasta until al dente (8-10 min)
- Heat oil in saucepan and saute garlic and onion until golden
- Add mushrooms and cook until soft
- Add spinach and cook 4-5 minutes, or until wilted
- Stir in pine nuts and wine and season well with salt and pepper. Cook for 1 minute
- Garnish with parmesan
