Spinach and Pine Nut Pasta Recipe

vegetarian pasta dish

Ingredients
8 oz whole wheat pasta
1/4 cup olive oil
2 tbsp garlic, crushed
1 onion, quartered and sliced
8 oz mushrooms, sliced
8 oz spinach
2 tbsp pine nuts
6 tbsp white wine
1 tbsp parmesan
Directions
  1. Cook pasta until al dente (8-10 min)

  2. Heat oil in saucepan and saute garlic and onion until golden

  3. Add mushrooms and cook until soft

  4. Add spinach and cook 4-5 minutes, or until wilted

  5. Stir in pine nuts and wine and season well with salt and pepper. Cook for 1 minute

  6. Garnish with parmesan
