Ingredients

cup all purpose flour |
| 1/4 |
cup corn flour |
| 1/4 |
cup sugar |
| 4 |
oz yogurt |
| 1/2 |
teaspoon vanilla extract |
| 1/2 |
cup almond breeze, unsweetened |
| 1/2 |
cup chopped mango |
| 1 1/2 |
tablespoons sugar free jam |
| 1/2 |
cup mango, puree |
| 1/2 |
teaspoon cinnamon |
| 1/4 |
teaspoon salt |
| 1/2 |
teaspoon baking soda |
Directions
- Preheat oven to 350 degrees.
- Mix dry ingredients together, set aside.
- Mix wet ingredients together incorporating yogurt first w/ milk (well-combined), then chopped mango, then pureed mango.
- Add wet ingredients to dry and lightly fold together just until combined.
- Add to parchment-lined loaf pan. Add jam on top and swirl it in.
- Bake for 30-35 minutes or until a toothpick comes out clean from center!
