Sweetie's Mango Bread

Makes 26 servings

Ingredients
5/8 cup all purpose flour
1/4 cup corn flour
1/4 cup sugar
4 oz yogurt
1/2 teaspoon vanilla extract
1/2 cup almond breeze, unsweetened
1/2 cup chopped mango
1 1/2 tablespoons sugar free jam
1/2 cup mango, puree
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 teaspoon baking soda
Directions
  1. Preheat oven to 350 degrees.

  2. Mix dry ingredients together, set aside.

  3. Mix wet ingredients together incorporating yogurt first w/ milk (well-combined), then chopped mango, then pureed mango.

  4. Add wet ingredients to dry and lightly fold together just until combined.

  5. Add to parchment-lined loaf pan. Add jam on top and swirl it in.

  6. Bake for 30-35 minutes or until a toothpick comes out clean from center!
