Beet, Tofu and Pesto salad

Makes 4 servings

Ingredients
4 Beets
4 oz. tofu
2 tbs Basil Pesto
1/2 tsp salt
1/2 tsp Pepper
1 tbs Olive oil
Directions
  1. Bake beets until tender, let cool

  2. Chop tofu into small pieces, and saute Pesto and salt, and olive oil, browning each side.

  3. Peel the beets once cooled, and cut into small pieces.

  4. serve with more pesto if you'd like
