Ingredients

Beets |
| 4 |
oz. tofu |
| 2 |
tbs Basil Pesto |
| 1/2 |
tsp salt |
| 1/2 |
tsp Pepper |
| 1 |
tbs Olive oil |
Directions
- Bake beets until tender, let cool
- Chop tofu into small pieces, and saute Pesto and salt, and olive oil, browning each side.
- Peel the beets once cooled, and cut into small pieces.
- serve with more pesto if you'd like
