cauliflower cheese (main)

Makes 2 1/2 servings

yummy with fresh crusty bread or garlic bread so you can mop up all those lovely cheesey juices

Ingredients
500 grams cauliflower, cut into large florets
1 ounce margarine
2 ounces wholewheat flour
2 ounces cheese, grated
1/2 teaspoon mustard powder
1 pint milk, skimmed
1 salt and pepper, season to taste
1 1/2 ounces cheese, grated, to sprinkle on top
Directions
  1. Cook cauliflower so it still has bite, drain and place in an oven proof dish.

  2. Now melt margarine in a saucepan on a low heat now add the flour and form a ball, keep stirring do not leave now add the milk slowly and gradually to ball and mix well making sure there are no lumps and continue this process until you have a smooth thick sauce thick enough to coat the back of a spoon now add the mustard powder seasoning to taste, once mixed in thoroughly, remove from the heat and add the cheese ajust seasoning if it needs it and pour sauce over the cauliflower, now sprinkle with cheese on top and bake in a pre heated oven gas mark 7-8 for 20 minutes or until cheese is browned and the cauliflower cheese is bubbling hot, serve immediately with bread of your choice.
